Garlic Cheddar Chicken

Garlic. Butter. Cheese. How can you go wrong with a recipe that includes all of these ingredients - and LOTS of them? I am not saying this is the healthiest entree out there, but live a little! The finished product with the buttery bread crumbs, melted chicken, and garlicky chicken is delightful.

I apologize for the lack of photos of the finished product, but by the time I was done making dinner, Chuck and I were starving and only wanted to wait for a few pics to be snapped! This recipe is easily halved - if you do that, one pound of chicken scallopini is perfect. I placed the chicken in an 11x7 baking dish instead and baked them about 25 minutes.

Before you know it, you will be scraping all the little bits of cheese and butter off the bottom of the pan like we were!

Garlic Cheddar Chicken

Makes 6-8 servings

1/2 cup butter
4 cloves garlic, minced
3/4 cup dry bread crumbs
1/2 cup freshly grated Parmesan cheese
1 1/2 cups shredded Cheddar cheese
1/4 teaspoon dried parsley
1/4 teaspoon dried oregano
1/4 teaspoon ground black pepper
1/8 teaspoon salt
8 skinless, boneless chicken breast halves - pounded thin

Preheat oven to 350 degrees F.

Melt the butter in a saucepan over low heat, and cook the garlic until tender, about 5 minutes.

In a shallow bowl, mix the bread crumbs, Parmesan cheese, Cheddar cheese, parsley, oregano, pepper, and salt.

Dip each chicken breast in the garlic butter to coat, then press into the bread crumb mixture. Arrange the coated chicken breasts in a 9x13 inch baking dish. Drizzle with any remaining butter and top with any remaining bread crumb mixture.

Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

Hi! I made this yesterday and it was very good...although the cheese burned..did you cover it while it baked? and yes, yours looks better than mine did! It would have tasted better w/o the burned cheese. Next time I guess I can add it 5 mins before its done.

@ Anonymous - I am sorry that your cheese burned! I did not cover mine...is your oven rack in the middle of your oven?

Hi, umm yes, its in the middle and I have the other rack on top (Im an amateur obviously). Maybe I could reduce the heat...my oven is fairly new (just moved) and i'm still adjusting. I've made a few things from your blog and I love it, thanks so much! Lorie

@ Lorie - No, it's good that it's in the middle of the oven! Depending on a particular oven, too low or too high may change the way the food cooks. So if it's a new oven you are right, the heat may be too high!
